Best Beef Noodles in Taipei 2026: Michelin Bib Gourmand & 500 Bowls Picks
Best Beef Noodles in Taipei 2026: Michelin Bib Gourmand & 500 Bowls Picks
In the Michelin Guide Taiwan 2026 (announced 14 July 2026), the Taipei beef noodle shops with a Bib Gourmand are Lao Shan Dong Homemade Noodles (Wanhua / Ximending) and Tian Xia San Jue (Da'an).
Wu Mamii Beef Noodles (門前隱味牛肉麵) made Taiwan's 500 Plates list in 2025 and the 500 Bowls list in 2026 with its Sanchong shop.
This is a quick guide for visitors:
what each bowl is, what it costs and which list it is on,
so you can choose before you go out.
Wu Mamii Beef Noodles | Ximen Hankou, Sanchong & Taichung
Full disclosure: this one is my own shop.
The bowl started as a pot of braised beef at my father-in-law's home:
tomatoes, beef bones, chicken bones and pork bones simmered together,
so the broth comes out red and rich in collagen.
Is it worth the trip? Don't take my word for it, here is what the judges said:
500 Bowls 2026: judge Ray Du (阿滴) picked the Sanchong shop,
saying its rich, punchy flavour keeps the soul of a street-food bowl even at a higher price.
500 Plates 2025: Chiu Li-kuan (邱瓈寬) wrote about the deep, collagen-rich old broth,
wide noodles with a good bite without being rubbery,
and tendon and shank braised until tender, finished with our house chili sauce.
How I eat it myself:
sip the broth first, then two mouthfuls of noodles,
then stir in the chili sauce, one bowl, two flavours.

Let me brag for just a moment...
In 2026 the Sanchong shop also received the 500 Bowls × Ministry of Environment “Friendly Food Award”,
because our takeaway switched to paper bags and paper containers.
In 2025 our broth even flew to Macau: Wynn Palace's food hall opened with 18 Asian brands, and one stall was ours.

Lao Shan Dong Homemade Noodles | Wanhua, Ximending

Open since 1949 in the basement of the Wannian Building, it simmers Taiwanese beef bones with ten Chinese herbs
and serves thick hand-cut noodles; Michelin calls it worth the queue.
A shop that has kept cutting noodles in a basement for over seventy years,
after nine years of my own, I can only stand up straight and salute (/ω\)
Tian Xia San Jue | Da'an, Ren'ai Road

US and Australian beef, noodles from Australian wheat in three widths,
and a broth of beef bones, short ribs and four kinds of tomatoes with different acidity, simmered for eight hours.
The signature bowl brings four cuts of beef together; there is an English menu.
“Four kinds of tomatoes”, as someone who cooks tomato broth, I can only nod quietly.
Halal Chinese Beef Noodles | Da'an, Yanji Street

Over sixty years old, using halal-certified fresh Taiwanese beef.
The signature bowl comes braised or clear, and the scallion flatbread with stir-fried beef is popular.
Mu Ji Beef Noodles | Xinyi, Wuxing Street

The broth starts at 7 a.m. with beef, herbs, bones and fruit;
clear broth is the favourite, and the flatbread is made in house.
Fruit in the broth: I get it. Sweetness should come from ingredients, not a sugar jar.
Kougyurou | Datong, Minle Street

A Japanese chef who once ran a ramen shop, in a renovated old house with a counter.
The broth is seasoned with kombu, sea salt and soy, lifted with Sichuan pepper.

Red-braised: Wu Mamii (tomato old broth), Lao Shan Dong (herbal braise), Tian Xia San Jue (tomato broth)

FAQ: Taipei beef noodles
Q: Is Wu Mamii (門前隱味) beef noodle soup worth trying?
A: Yes. The Sanchong shop was selected for the 4th 500 Bowls (500碗) list in 2026, where judge Ray Du (阿滴) said its rich, punchy flavour keeps the soul of a street-food bowl even at a higher price. In 2025 it was on the 500 Plates (500盤) list, where judge Chiu Li-kuan (邱瓈寬) praised the deep, collagen-rich broth, chewy wide noodles and tender tendon and shank. The signature bowl is tomato braised beef noodle soup, NT$279 at Ximen Hankou and Taichung Old Town.
Q: Where is Wu Mamii and can I book a table?
A: Wu Mamii has three shops: Ximen Hankou in Taipei (No. 7, Lane 20, Sec. 2, Hankou St., Wanhua District, daily 12:00–21:00, last order 20:30), Sanchong Air Force Village in New Taipei, and Taichung Old Town. All three take online bookings through Inline, and walk-ins can join the queue on site.
Q: Does Wu Mamii have an English booking page?
A: Yes. The Inline booking page opens in English: choose Ximen, Sanchong or Taichung, then pick your date, time and party size.
Q: Which beef noodle shops in Taipei are Michelin Bib Gourmand in 2026?
A: According to the Michelin Guide Taiwan 2026 (announced 14 July 2026), the two Taipei City beef noodle shops with a Bib Gourmand are Lao Shan Dong Homemade Noodles (Wanhua) and Tian Xia San Jue (Da'an).
Q: Are Halal Chinese Beef Noodles, Mu Ji and Kougyurou Bib Gourmand?
A: No. These three Taipei noodle restaurants are listed in the Michelin Guide, but they do not hold a Bib Gourmand.
Q: Braised or clear broth: what is the difference?
A: Hong shao (red-braised) broth is dark and savoury, often built on soy, spices or tomato; Wu Mamii's is a tomato red-braised broth simmered with beef, chicken and pork bones. Qing dun (clear-stewed) broth is light and clear, so the beef flavour comes through on its own.
